This is one monster you'll want to invite in.​ Fantastic. In every sense. And once those​ tentacles get a hold, you won't want to escape. ​A bewitching beast from the peat bogs of the​ Scottish coast, discovered warming itself by fires​ of driftwood. A true wonder.​

Frightening at first glance? Maybe. But look​ beyond that show of teeth and this behemoth is​ revealed to be a bit of a sweetie. Which poses the​ question: How does a creation with such intensity,​ so much bite, still caress with a gentle touch?​

A PERFECT SERVE

Inspired by the 19th Century Clover Club cocktail, our version, The Compass Club, is a delicious take on peat. The tartness of the raspberry and citrus perfectly complements the gentle smokiness of The Peat Monster, creating a classic with a twist. 

Muddle 3 fresh raspberries in the base of a shaker. Add 50ml The Peat Monster, 15ml lemon juice, 10ml of sugar syrup and one egg white (or substitute for aquafaba), then shake with ice and strain back into the shaker. Dry shake (without ice) to emulsify and fine strain into a chilled glass - we tend to use a Nick & Nora. Garnish with a fresh raspberry on a cocktail stick.

Smoke can seem intimidating, but it can also be an incredible vehicle for flavour.

Peated whisky and oysters make an exceptional pairing because their flavours complement and enhance each other in a unique and dynamic way. Peated whisky, with its smoky and ever so slightly maritime character, mirrors the briny qualities of fresh oysters, adding a wonderful depth and richness.
